Black Is Beautiful

In 2020 Weathered Souls initiated an idea, Black is Beautiful, to get breweries across the US to make stouts to support restorative justice projects. This made me think that other liquor could do this as well.

I adjusted the Old Mose recipe to reattempt the goal of a black sake. The color was the hardest to create. I used pea flower tea to get a nice blue base, red rice yeast to bring in some earthiness and a good red color, some gin barrel wood chips for color and some botanicals, and some squid ink powder.

The squid ink played havoc with the color. It didn’t occur to me that the carbon would strip the color.

The flavor wasn’t too bad though. There was some nice summer wine flavors and a light, fruity, nose.
