Well there are plenty of reasons to challenge yourself and the best one might be challenges from friends.
So here we are making a Dr. Pepper Sake two ways. One with actual Dr. Pepper and one with a clone syrup I’ll make myself.
I stated off by soaking the rice in Dr. Pepper hoping to dilute the sugar bomb for the yeast and maybe imparting some flavor compounds into the rice.
So far it’s going ok. The yeast starter hasn’t shown much action yet, but it does have a lovely brown sugar smell at the moment.
Also after doing some research I’m thinking that some version of Dr. Sake will be the name. Might play around with it a bit more, but that’s pretty much it for now.
