Starting the Gin Barrel Sake / by Marc Hughes

Tonight I’m starting the next experiment, a gin barrel sake. I’m starting off by prepping the rice steam bath by brewing a tea made with Juniper Berries, Coriander Seeds, a small amount of Lavender, some California Bay Leaves, Jamaican Allspice Berries, Green Cardamom Pods, Mint Flowers, dried Orange Peal, and a few leftover spruce tips.

Tomorrow I’ll use this tea as the base water for steaming the rice. I’m hoping that some of the flavors will be imparted onto the rice and help develop some of the florals from the #12 yeast.
